Creamy Avocado and Corn Jacket Potato

I tried a healthy version of Jacket Potato – just because I absolutely love it but can’t afford to look like a big fat potato as a result.  This recipe is vegan and vegetarian friendly.  Easy to make and delish to eat!

Review: VonShef Stone Raclette Grill

I’ve recently bought the VonShef Stone Raclette Grill.  I was missing some grilled cheese from Switzerland.  I was there 2 years ago, the cheese is to die for.  I bought this grill to have an indoor BBQ as the weather in London is so unpredictable.  So just in case. I absolutely loved it (thought I’d give you my verdict first) 🙂

You can’t go wrong with Quorn Sausages. You seriously can’t.

Cheese from heaven.  It just couldn’t get any better.

 

Here’s a breakdown of the VonShef Grill.  What I liked/disliked etc!

What we had for dinner from the grill:

  • Quorn Sausages with bread
  • Halloumi-Cherry Tomato Kebabs
  • Roasted Potatoes
  • Corn on the Cob
  • Grilled Asparagus
  • Grilled Peppers
  • Grilled Gruyere Cheese *to die for*

How to Use the Grill:

  • Pre-heat it for 20-25 mins
  • Brush oil on it lightly
  • Rub a bit of salt on the stone

What I liked about it:

  • Fun & Interactive Dinner
  • Easy to assemble
  • Healthy cooking option (minimal oil)
  • Grilled food is always yummy!

What I disliked about it:

  • You have to wait to wash up (I left it overnight, but some people say 3-4 hours is plenty)
  • Washing up by hand as opposed to a dishwasher
  • The wire for the cord is not long enough to use on the table – I got an external long adapter

Ferrero Rocher Banana Smoothie

Hi everyone!  It’s been super hot in London, I actually feel I’m near the equator – like Singapore or something!  You’d never expect London to have a real summer.  It feels weird.  I can’t exactly complain though just ’cause I am soaking the sun up!  🙂  I’ve been experimenting with drinks to combat the heat and make use of my blender. Haha!  

I’m on a Serious Summer Smoothie Mission.

I’ve got a box of Ferrero Rocher as part of a Birthday Gift from someone really special, so I’ve found ways to eat it. HAHAHA!  Not that you need ways to eat chocolate, just to be clear! 🙂  

IMG_2605Yummyyyyy.  It was really heavy though – so treat it like an in between meal.  (Yes there’s such a thing! No one said you can only have 3 meals a day!)

Ferrero Rocher Banana Smoothie

Makes:  2 tall glasses

Ingredients:

  • 2 frozen bananas
  • Water 
  • 4-5 Ferrero Rochers
  • A bit of milk (if you want it richer)
  • Chocolate powder 

Method:

  • Blend frozen bananas with a bit of water (3 tbsp or so) and Ferrero Rochers.  
  • Add a bit of milk if you want.
  • Sprinkle Chocolate powder and some crushed chocolate for garnishing.

Fresh Raspberry Lemonade

Hello everyone!  I was feeling nostalgic a few days ago.  Dreaming about my trip to Prague…

In Prague, I had the most amazing drink to quench my thirst on a hot, scorching day.  It was basically a fresh lemonade with a puree of raspberries in it.  So unique!  I loved the burst of flavours and we had 3 days in a row.  I’ve been missing it in London so thought I’d give it a shot.  My husband said it was exactly the same – and well – I do agree! 🙂  Get your antioxidants, vitamin C, A and E in one drink!  Not to mention, raspberries are rich in minerals too. They are a super food and thankfully super easy to eat.  So berry good!

B’s Fresh Raspberry Lemonade

Makes:  2 tall glasses

Ingredients:

  • 1 Lemon, freshly squeezed
  • 1/2 cup crushed raspberries
  • 1 bottle sparkling water
  • 1-2 tbsp sugar syrup (I make this fresh)

Method:

  • Mix everything in a nice glass.
  • Drink chilled

Note:  Sugar Syrup can be made by adding organic cane sugar to boiling water.  Let it dissolve, keep it in a bottle and use as needed.  I find this makes drinks dissolve sugar better.  Otherwise – when you add raw sugar to it – it tends to sit on the bottom!

Copenhagen Travel Guide for Vegetarians!

I almost feel local in the streets of Copenhagen now. I’ve been there thrice in the span of 4 years, My husband’s office is located there – and sometimes I tag along. My initial reaction to the country was that its “alright” but it can burn a hole right in your pants, honestly, forget about it merely drilling a hole in your pocket. Extortion is the key word here. I vividly remember a bowl of roasted potatoes costing me the equivalent to 15 pounds. I almost died on the spot. The inner cheapskate in me had fainted. But now, being a local foreigner there (yes, the juxtaposition was necessary) I know cheap vegetarian eats that are delectable. So here’s my little guide of must-sees and must-eats (vegetarian food in Copehagen). Vegetarian Must Eats in Copenhagen:

  • DOP – Vegetarian Hotdog from a hotdog stand. OMG – there’s one! DOP. It’s located on Stroget itself, opposite H&M. I had it three lunches in a row! It was that good
  • RizRaz – located near Stroget. It has a vegetarian buffet (salads, pasta, lasagna, falafels) It’s EXCELLENT.
  • Chilli-Milli – very fresh salads. A bit costly but healthy!
  • Rajisimmo – Churros from there with chocolate. OMG!
  • Sticks – yummy fruit kebabs with chocolate and nuts. Taste is quite gourmet.

Honestly, there’s not much to do in Denmark (compared to other European Destinations) but here’s a list of possible things to do. Places to visit in Copenhagen: Canal Boat Tour – 1 hour tour that’s just about 7 pounds and lasts an hour. Nice way to see the country. Little Mermaid – Very disappointing. So don’t go all the way there to see a small black statue. Instead go on the canal tour, it passes it and that’s suffice. National Museum – I enjoyed it. It has many rooms and is very well made. Gives you a good outline of the Stone Age – Bronze Age – Iron Age etc. It even had a skeleton in a coffin. That was quite unusual. Stroget – walk the main street and eat hotdogs!! 🙂 Tivoli Garden – it’s a beautiful place to walk around even if you’re not planning on going on rides! Some pretty pictures: IMG_2465

Appnesia?

Hello everyone – I feel like I’m having blog-nesia.  I’m completely forgetting to blog, just been caught up with so much lately.  But that is absolutely no excuse.  

I have so much to write.  New things I have seen, tasted and done.  Also,  Envylope has been out in the Newspaper and we have also been interviewed and its published online.  It’s been very exciting.  Can’t wait to blog all about it.

For now, my latest discover:  Appnesia.

A word existing in the dictionary that simply means forgetting to message/call when picking up your smart phone and being distracted by Apps.  The world is evolving guys!

Update for Envylope is out – the BIGGEST update YET!

We have been working on this for almost 2 months now.  It’s been tiring and we both have learnt so much more from these 2 months!

The update is here and available on the App Store🙂  The best feature I personally like is the theme selection (yes I’ve mentioned it before!), as I love being able to customise my app in a way that is pleasing to my eyes!  It’s like the concept of choosing a notebook design.  Yes – something so trivial but it makes all the difference!

So check it out… And would love some support from fellow bloggers – Review Us on the App Store and spread the love! 🙂  I did not realise how Apple works with Reviews till recently.  Did you know you can only see reviews of an App from the same country as you?  Unfortunately, that’s so misleading and makes it tough to have MANY REVIEWS in ONE PLACE.  Dispersion is best soley for pollen grains and not for apps – LOL!

Envylope Update is on its way… Here’s a Sneak Peak!

I’ve been so excited while working on Envylope App‘s Update.  The best new aesthetic feature really has to be the ability to select your own theme.  Yes, I designed it!  🙂  It should be out in a week or so, we are just tying up lose ends now.  Wish us all the best, and I’ll let you know when it’s out.

Easy Almond Pastries

Hello all!  I’ve been so busy working on the Update for Envylope!  It has beautiful themes to choose from (I guess I find them beautiful may coz I did the designing LOL).  Hopefully it’ll be out next week!  I haven’t been doing much experimentation cooking to be honest. Hope to in the next few weeks.  I made Almond Pastry this week for guest for tea.  It’s a friends recipe from Bangkok – so I can’t take credit for it… But its very nice, easy and yummy!  Here are pictures to entice you 🙂

Easy Almond Pastry

Bakes: A huge batch

Ingredients:

  • 1 cup almonds
  • 1 cup sugar
  • 1 cup butter
  • 1 packet Jus-Rol Puff Pastry
  • Some milk for brushing

Method:

  1. Preheat oven as shown on package.
  2. Put almonds in a food processor till its fine.
  3. Melt butter.  Mix butter, almonds & sugar in a bowl.
  4. Roll out pastry and cut in small squares.
  5. Fill pastry with filling and close it.  It doesn’t matter exactly how you close it, as it looks nicer when it opens up a bit in the oven anyways!
  6. Pop in the oven and check on it.  Should be done by 12-15 mins! 🙂

Yeap and that’s it.  It’s really easy!  Also, because you brush it with milk instead of egg – it’s vegetarian, this makes it easy with all types of guest.  Let me know what you think!
