Hey guys! I’ve been experimenting with different vegetarian egg recipes. Simply because I miss eating egg (I used to love the flavour and how versatile it is!) It’s a good alternative to my tofu scramble recipe.
I tried out this recipe after searching for a few online, adjusted it here and there to my liking. And after 1-2 tries came up with this. It’s DELISH and its a Frittata. And it’s eggless. Eggless FRITTATA. Okay, so the funny thing is when I made this my husband had no clue what a frittata was, but he loved the name. LOL. Can’t blame him though, as he’s been vegetarian all his life (yes he’s missed out, but it is a cleaner life!) I definitely agree that frittata is a pretty cool name!

B’s Eggless Tofu Frittata
Makes: One tray
- Firm tofu (1 1/4 cup)
- 1/2 cup cheddar or mozzarella cheese
- Handful of goats cheese
- Few veg sausages, baked and cut up into bite size pieces
- Few potatoes, steamed and diced
- 1 tbsp besan flour
- 1 veg stock cube (I used Knorr but it really doesn’t matter much!)
- 1 tsp cumin powder
- 1/2 tsp turmeric powder
Some salt, pepper, chilli powder to season
- Blend tofu with some water (1/2 cup or so) and flour, stock cube and seasonings. The consistency should not be too watery and not too thick. It should be similar to a pancake mix (just a bit thicker).
- Lay “veggie sausages” on the base of the oven-proof dish.
- Pour mixture over it.
- Top it off with the 1/2 cup cheese.
- Bake at 200 degrees for 45 minutes to an hour. (Check to see if its firm)
- Top with goats cheese right after its out of the oven (we only need it to slightly melt!)
I’ve been having grilled potatoes as a side for two days. I finally have some spare time today so thought I’d leave a recipe. It’s just so simple and yummy to not share! 🙂

B’s Easy Grilled Potatoes
Makes: As much as your heart desires!
350 g baby potatoes
Salt, Pepper, Dried Basil
Steam potatoes for 15-20 mins. Poke with a fork to test if its cooked. Leave to cool.
Cut potatoes into halves. Put oil on a grill pan and grill potatoes on both sides till well done. Sprinkle salt, pepper and dried basil to taste. Keep grilling. The crispier the better!
This is one of the easiest sides I make, and one of the yummiest!
The past two days have been crazy. Everyone’s sick of hearing about the dress. But yet, it is possibly one of the most interesting things I have come across in quite awhile. I was baffled when my husband and I saw the same photo on the same phone DIFFERENTLY. I saw it as gold & white and he saw it as blue and black. LIKE SERIOUSLY?!

In a nutshell:
An excellent read for Asian children and parents. A book that is fun and has culture in it.
In my opinion, it is imperial that children’s books have a hidden message in them, where they take something from it. In addition, this message should be presented in an interesting and fun manner.
Ria & Raj And the Gigantic Diwali Surprise do just that.
It starts off with Ria & Raj helping their mum in the kitchen for Diwali preparations. Their mum is making ladoos to give the temple and guests for Diwali. Personally, I like the authors’ choice of making ladoos as opposed to other Indian sweets. This is predominantly due to the fact that ladoos are traditional yet fun for kids to make. Kids in western countries can draw similarities between baking cookies and making ladoos. This similarity is depicted when Raj and Ria ask if they can make a spaceship shaped ladoo and a princess one respectively. This illustrates that ladoo making can be a fun activity that keeps the children entertained whilst keeping the culture alive.
Also, the concept of sharing is highlighted with the intention for the ladoos to be given to people. Like any mischievous child, Raj has an idea to make one big ladoo instead of 200 small ones. While making it, there is a lot of emphasis on the sounds. For instance, reading squish and squash aloud repetitively would be a fun read for children.
I like the fact that Ria & Raj are both Asian names that are easy to pronounce. This makes it easier for children to read with confidence. Moreover, I simply love the idea of the surprise being an enormous ladoo. The imagery is akin to a big snowball. It sounds like a lot of fun, even for an adult!
There’s a further emphasis on sharing when Raj points out that they can cut the big ladoo into different pieces to still give the temple and guests. So they go along with their idea. And the surprise of the big ladoo is for their parents to unveil.
In conclusion, this book would make an excellent festive and educational gift for children on Diwali. But don’t forget to give them a box of ladoo with the book to ‘squish and squash’ and form a gigantic surprise of their own!

As you get busier you tend to cut some corners where food is concerned. This is especially true when snacking. So to make sure I don’t jump on the full-fatty-wagon, I keep nuts and seeds nearby my computer. For a dessert craving that is relatively healthy (as opposed to eating a banana split LOL) is this! I’d love to take credit for this idea, but its not mine. I came across it months ago on the internet (I’m not sure where, but the person put chocolate chips in the banana). I put Nutella. Not a big diff. But just to be clear. It’s a Nutella banana boat! I’ve just bought Raw Peruvian Cacao Nibs that I will try putting instead.
Easy Baked Banana & Nutella
Makes: One Banana Boat
- One banana
- 2 tbsp of Nutella
- Slit the banana length wise in the middle.
- Stuff with Nutella
- Wrap with foil
- Bake in the oven at 200 degrees for 15 mins.
YES that’s it. It’s truly decadent. Feast in. I’d recommend one each if you are two people LOL. My husband and I couldn’t share one. Just FYI!
